Roasted Rainbow Root Vegetables Pre-Roasting

We were waiting on an electrical upgrade to our building before we could turn our new oven on, so it’s been 10 months (!) since I could do something like this. I honestly forgot just how good roasted veggies are. Tripp loved them too.

I also forgot how easy they are to make! simply toss in olive oil, salt, and pepper and roast at 400° for about an hour, stirring the veggies a couple of times. The large sprigs of rosemary are optional, but I really love the flavor they give the veggies and the way they make the apartment smell delicious.

I’m awarding myself bonus points for adding whole roasted garlic to this mix, though that’s easy too. Slice the tops off, cover with olive oil and wrap in foil. This way the cloves will get soft and can easily be spread on bread later.

We ate these roasted veggies alongside our Vegan Baked Macaroni and Cheese for the ultimate comfort food meal, but they’d pair well with almost anything!

RECIPE: ROASTED RAINBOW ROOT VEGETABLES AND GARLIC

Roasted Rainbow Root Vegetables

Yields6 Servings

 2 lbs Root Vegetables (ex. sweet potatoes, purple potatoes, parsnip, yellow carrots, red onion)
 Olive Oil
 Salt
 Pepper

Preheat oven to 400°F. Cover a large baking sheet with parchment paper.

Toss vegetables with enough olive oil to lightly coat them. Season with salt and pepper.

Slice the tops off of the garlic to expose the bulbs inside. Generously drizzle olive oil to cover the garlic. Wrap in foil.

Arrange veggies and bulbs of garlic on baking sheet. Sprinkle with fresh herbs like rosemary or thyme.

Bake for about an hour, stirring veggies occasionally to ensure even cooking.
