Roasted Rainbow Root Vegetables and Garlic

Roasted Rainbow Root Vegetables

 2 lbs Root Vegetables (ex. sweet potatoes, purple potatoes, parsnip, yellow carrots, red onion)
 Olive Oil

Preheat oven to 400°F. Cover a large baking sheet with parchment paper.


Toss vegetables with enough olive oil to lightly coat them. Season with salt and pepper.


Slice the tops off of the garlic to expose the bulbs inside. Generously drizzle olive oil to cover the garlic. Wrap in foil.


Arrange veggies and bulbs of garlic on baking sheet. Sprinkle with fresh herbs like rosemary or thyme.


Bake for about an hour, stirring veggies occasionally to ensure even cooking.
